Skinny Pancake To Open in Hanover, NH

Hanover, NH—The Skinny Pancake will be opening a new 4,000 sq ft location in the heart of downtown Hanover, NH in the Spring of 2016. With a mission of building a healthier, safer and more delicious foodshed while creating everyday enjoyment that is fun and affordable, the Skinny Pancake will return hundreds of thousands of dollars back into the Upper Valley economy in the form of purchases from local farms and food producers.

The Hanover location in New Hampshire will add to the Skinny Pancake’s existing Vermont outlets on the Burlington Waterfront, at the Burlington International Airport, at the University of Vermont, in downtown Montpelier, as well as seasonal locations on Burlington’s Church St Marketplace and at Sugarbush Resort in Warren, VT.

A recent audit of the company’s Burlington location’s food sourcing discovered that 71.1% of  raw and value added products purchased by the restaurant were derived from local sources. In 2014, the Skinny Pancake estimated they put roughly $1 million back into the local economy in the form of purchases from over 101 local farms and food producers..

“We are thrilled to continue our commitment to local sourcing and community engagement in an area with such a strong foundation of farmers and food producers. We hope to become a thread in the fabric of the community here in the Upper Valley,” says Benjy Adler,  Co-Founder/Owner of The Skinny Pancake. “One of the main reasons we’re coming to Hanover is because we got more unsolicited requests to come here than anywhere else.”

The restaurant space, located on 3 Lebanon Street, will offer breakfast, lunch, dinner, brunch and dessert, featuring their trademark sweet and savory crepes, burgers, paninis and salads, as well as craft microbrews, wine and creative cocktails made from locally-produced spirits.

The space will be outfitted to accommodate events, including live music, private restaurant rentals, and fundraisers.  

‘We want the community to tell us what they want, and to help mold our offerings. We intend each of our operations to be an unique expression of both the staff and customers,’ notes Adler.

Building permits will be filed this week, with hiring to begin soon. The restaurant will be looking for a General Manager with strong ties to the Upper Valley food scene.
