Shelburne Welcomes Studio Cacao, Chocolatier. Other Artisans to Follow
Following the successful launch of their boutique chocolate design company, Studio Cacao- Chocolatier is expanding operations beyond their Burlington based market. Their new production studio at Shelburne Green will allow them to build on their existing fresh chocolate gift line while developing new products.
Studio Cacao creates their truffles by blending 100% sustainable, fair trade chocolate with organic Vermont cream from Butterworks Farm of Westfield. Their chocolates are freshly made, applying classic techniques developed within the Swiss chocolate tradition.
Kevin Toohey is head chocolatier of the family owned company. He and his wife Laura began working together in 1978, training under Master Chefs Rene Nussbaum and Ulrich Wagner, both of Basil, Switzerland. After moving to Vermont in 1994, the Tooheys opened LUNA Chocolatier in Hardwick, growing and finally selling LUNA several years later. They have now settled in Burlington, bringing their son Rowan onto the team with fresh new energy.
The Tooheys are developing plans for a retail store and chocolate café and are excited to be collaborating with other businesses, both agricultural and forestry based, currently vying for space at the new Artisan Village, adjacent to Shelburne Green. Studio Cacao is located at 6221 Shelburne Road, next to Nova Natural.
