Saffron Workshop: Perfecting Production and Market Opportunities
The Univ. of Vermont North American Center for Saffron Research and Development has arranged a tour for those interested in saffron production on Wednesday March 11, from 12:45-5:45 pm. This is a great opportunity to rub elbows with several of the local and visiting speakers coming to the 4th annual saffron workshop. The tentative program includes a visit to our solar saffron research plots at Peck Solar, in Burlington, where we are testing the potential of growing saffron within solar fields. Next, we will stop at the saffron operation of Brian Leven of Golden Thread Farm in Stowe, VT. Brian is growing saffron in a high tunnel and in the field (goldenthreadfarm.com/). This year he harvested over 100 grams, and is selling it on-line and locally to chefs who value local, high quality products. If the sap is flowing, we will stop at Percy Maple Products to see how maple syrup is produced (special treat for the out-of-towners). This is owned and operated by Paul Percy, a sugarmaker for 60 years. We will then stop at Plate Restaurant, where Brian sells his saffron, for a special saffron snack (www.platestowe.com/). Aaron Martin, the chef/owner of Plate, is excited about having a local source of high quality saffron, and is happy to be showcasing his saffron delicacies.
