Red Clover Inn & Restaurant Releases Summer Cocktail Menu

The Red Clover Inn & Restaurant in the heart of the Killington Valley has released its Summer 2017 specialty cocktail menu.

With a preference for quality ingredients, fresh fruit, and a recipe that will allow a bartender to create a consistently delicious drink glass after glass, Red Clover Inn cocktails herald the unofficial start to summer.

Cocktails that make the menu are simple, with complementary flavors. They feature Vermont-made spirits when possible, and warm-weather cocktails tend to be lighter and livelier with fresh fruit purée.

Award-winning Green Mountain Organic Vodka stars in the Pomegranate Martini, along with pomegranate purée and fresh lemon juice, while the Ephemeral is mixed with Organic Vermont Sunshine Gin and Vermont Celery Bitters. The Red Manhattan is created in-house with pure Vermont maple syrup, while the Seelbach is a Vermont take on a bartender’s yarn about author F. Scott Fitzgerald and Kentucky’s Seelbach Hotel in the early 1900s.

Wine & Beverage Director Thomas Meek notes that no matter who created the Seelbach, “I found it in New York City at the Brandy Library bar and lounge, and loved it so much that I brought it to the Red Clover Inn.” Meek also favors the Black Currant Caipirinha, “A take on the number one Brazilian national cocktail: we use a worldly cachaça sugar cane rum, and add black currant puree and of course fresh limes.”

The Inn also serves local brews on tap, and has been awarded the Wine Spectator Award of Excellence for several years in a row. With accommodations for a dozen couples, the inn’s restaurant and bar are open to the public, Thursday through Monday. The Red Clover Inn is owned by the Tyler family who also own and run the Tyler Place Family Resort, an all-inclusive summer destination that has welcomed guests to the shores of Lake Champlain in Northern Vermont since 1933.
