Red Clover Inn Partners with Distillers to Shine the Limelight on Local Spirits
The dinners will take place in the casually elegant dining room at the Inn, located in the heart of the Killington Valley. June 10 is set aside for Stonecutter Spirits from Middlebury, July 15 features Vermont Spirits from Quechee, and August 12 shines the spotlight on Smugglers’ Notch Distillery in Jeffersonville.
In June Martha Mack from Stonecutter Spirits will offer barrel-aged gin and whiskey cocktails that draw on seasonal produce and perfectly pair side-by-side with a four-course dinner. “Thoughtful partnerships like these allow us to deepen the dining experience, showcasing the talent of the makers and producers of our state,” noted Mack. “Collaboration, innovation and experiences you can't find elsewhere– that’s the essence of Vermont."
Single-barrel gin, Campari, grapefruit juice, fresh lime juice, and simple syrup comprise the Hey Ladies cocktail, served with a free-form crab cake and Vermont-foraged ramp remoulade. In the next course, the Peach Julep is Heritage Cask Whiskey, simple syrup, fresh mint leaves, fresh peaches, and bitters, accompanied by pepper-crusted beef carpaccio with capers, red onion, and balsamic drizzle. In the third course, the Tree's Knees of single-barrel gin, fresh lemon juice, and maple syrup is matched with house-made shrimp fettuccine, finished with asparagus, roasted tomato and herbs. Dinner concludes with white chocolate mousse with raspberry coulis and cacao nibs.
“Vermont-made spirits are among the best in the world. Mixing them into cocktails and marrying them with Red Clover’s specially developed pairing menu of locally-sourced cuisine is a match made in heaven. The full June kick-off dinner menu is available on the Red Clover Inn website. Served community-style on shared tables, each cocktail dinner features four one-night-only courses with three paired cocktails. Dinner starts at 6:00 pm and the cost per person is $60 plus tax and gratuity.
The Inn also serves local brews on tap and has been awarded the Wine Spectator Award of Excellence for five years in a row. With accommodations for a dozen couples, the inn’s restaurant and bar are open to the public, Thursday through Monday. Reservations are recommended: 802.775.2290.
The Red Clover Inn is owned by the Tyler family who also own and run the Tyler Place Family Resort, an all-inclusive summer destination that has welcomed guests to the shores of Lake Champlain in Northern Vermont since 1933.
