Newest Skinny Pancake Venue to Open on University of Vermont Campus

The Skinny Pancake is joining UVM Dining in opening their newest location at UVM's Living/Learning Center on Main Street. Long-time Skinny Pancake employee Anna Walsh will lead the operation in the role of General Manager.

The 1,200 square foot facility will be open seven days a week for three meals a day. The Skinny Pancake will be offering a selection of its classic sweet and savory crepes as well as many grab-and-go options to serve students and staff on the run.

In keeping with Skinny Pancake’s social mission and commitment to local sourcing, the majority of menu items will use local raw and/or value added ingredients.  “Skinny Pancake’s priorities align with our sustainability goals and UVM’s commitment to the Real Food Challenge,” said Melissa Zelazny, Resident District Manager of UVM Dining.

“We look forward to working collaboratively within the UVM community to generate additional programming, sense of community and vitality,” said Benjy Adler, co-owner of The Skinny Pancake.

We anticipate opening the Skinny Pancake at UVM's Living/Learning Center on October 12, 2015.
